  • 3 ripe bananas, mashed
  • 1 ½ cups all-purpose flour
  • ½ cup whole wheat flour
  • ½ cup maple syrup or coconut sugar
  • ⅓ cup coconut oil or vegan butter, melted
  • ½ cup unsweetened almond milk (or oat/soy milk)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp vanilla extract
  • Optional: ½ cup chopped walnuts or dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas.
  3. Mix in almond milk, coconut oil, maple syrup, and vanilla extract.
  4. In another bowl, whisk together all-purpose flour, whole wheat flour, baking powder, and baking soda.
  5. Combine wet and dry ingredients, mixing gently until just incorporated.
  6. Fold in walnuts or chocolate chips if using.
  7. Pour batter into prepared loaf pan and bake for 45–55 minutes, or until a toothpick inserted comes out clean.
  8. Let cool completely in pan before slicing and serving.

Notes

Use very ripe bananas for maximum sweetness and moisture. Do not overmix the batter to keep it fluffy.
