This high-protein banana bread is soft, moist, and packed with nourishing ingredients. Perfect as a breakfast, post-workout snack, or wholesome treat for the family.

Ingredients

  • 3 overripe bananas, mashed
  • 2 large eggs
  • ¼ cup Greek yogurt or almond butter
  • ¼ cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 cup oat flour or almond flour
  • ½ cup protein powder (vanilla or unflavored)
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • Pinch of salt
  • Optional: dark chocolate chips, chopped nuts, chia seeds

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line your loaf pan.
  2. In a large bowl, mash bananas. Whisk in eggs, yogurt (or almond butter), maple syrup, and vanilla until smooth.
  3. In a separate bowl, combine oat flour, protein powder, baking soda, cinnamon, and salt.
  4. Gently fold the dry mix into the wet ingredients—don’t overmix.
  5. Pour batter into the loaf pan. Smooth the top and sprinkle with optional toppings.
  6. Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.

Notes

Use ripe bananas with lots of brown spots for best sweetness and moisture. If using plant-based protein, add 2–3 tablespoons of extra mashed banana or milk to prevent dryness.
