A rich, moist banana bread with a nutty twist—made with creamy pistachio butter for flavor, warmth, and a pop of green.

Ingredients

  • 3 ripe bananas, mashed
  • ½ cup pistachio butter (room temperature)
  • 2 large eggs
  • ½ cup brown sugar or coconut sugar
  • ¼ cup melted butter or neutral oil
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • Optional: ½ tsp ground cinnamon or cardamom
  • Optional: ½ cup chocolate chips
  • Optional: ⅓ cup chopped pistachios

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
  2. In a large bowl, mash bananas. Stir in pistachio butter, eggs, sugar, melted butter, and vanilla. Mix until smooth.
  3. In another bowl, whisk flour, baking soda, salt, and optional spices.
  4. Fold dry ingredients into wet mixture just until combined. Do not overmix.
  5. Gently fold in chocolate chips or chopped pistachios if using.
  6. Pour batter into loaf pan. Optionally sprinkle more chocolate chips or pistachios on top.
  7. Bake 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 10–15 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas and room temperature ingredients for best results. Don’t overmix the batter to keep it light and moist.
