  • 2 large eggs
  • ¼ cup melted coconut oil (or avocado oil)
  • ½ cup unsweetened applesauce
  • 1 tsp pure vanilla extract
  • 1½ cups whole wheat flour (or a mix of oat and almond flour)
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • Optional: ½ cup chopped walnuts or dark chocolate chips (no sugar added)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, mash the overripe bananas until smooth.
  3. Add the eggs, melted coconut oil, applesauce, and vanilla. Mix until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  6. If using, fold in your mix-ins like walnuts or sugar-free chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
