Monster Eyeball Cake Pops are spooky, colorful, and fun to decorate—perfect for Halloween parties or baking with kids. Moist cake and frosting form the base, with candy melts and creepy eyeball decorations for a frightfully fun treat.

Ingredients

Scale
  • 1 box of baked cake (any flavor: red velvet, vanilla, chocolate, etc.)
  • ½ to ¾ cup frosting (cream cheese, buttercream, or store-bought)
  • Candy melts (assorted colors)
  • White chocolate (optional)
  • Candy eyeballs
  • Gel food coloring (red, green, purple)
  • Red icing or edible pen
  • Lollipop or cake pop sticks
  • Sprinkles or edible glitter (optional)

Instructions

  1. Bake the cake and let it cool completely.
  2. Crumble the cake into fine pieces using hands or a food processor.
  3. Mix in ½ to ¾ cup of frosting gradually until the mixture has a dough-like consistency.
  4. Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.
  5. Chill the cake balls in the freezer for 20 minutes or in the refrigerator for at least 1 hour.
  6. Melt candy melts or white chocolate in the microwave, stirring every 20 seconds.
  7. Dip the end of each stick into the melted coating, then insert it into a cake ball.
  8. Dip each cake pop into the coating until fully covered. Tap gently to remove excess.
  9. Place the dipped pops upright in a foam block or cake pop stand to set.
  10. While still tacky, attach a candy eyeball to the center of each pop.
  11. Once set, use red icing or edible marker to draw bloodshot veins.
  12. Optional: Add sprinkles, edible glitter, or additional icing for unique monster designs.

Notes

Chill your cake pops before dipping for best results. Use candy melts for easy coating and fun colors. Red velvet cake adds a spooky surprise inside.
