These easy mini banana muffins are moist, naturally sweet, and perfect for little hands. A simple go-to snack ideal for busy families and beloved by kids and adults alike.

  • 23 ripe bananas (about 1 cup mashed)
  • 1 egg
  • ¼ cup melted butter or coconut oil
  • ¼ cup brown sugar or maple syrup
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt
  • Optional: ½ cup chocolate chips, nuts, or shredded coconut

Instructions

  1. Preheat the oven: Preheat oven to 350°F (175°C). Lightly grease a mini muffin pan or line with paper cups.
  2. Mash bananas: Mash the bananas in a large bowl until smooth.
  3. Mix wet ingredients: Mix in the egg, melted butter or oil, brown sugar or maple syrup, and vanilla extract.
  4. Combine dry ingredients: In a separate bowl, whisk flour, baking powder, baking soda, and salt.
  5. Fold ingredients together: Gently fold dry ingredients into wet mixture until just combined. Do not overmix.
  6. Add optional mix-ins: Stir in optional add-ins if using.
  7. Portion batter: Portion batter into muffin cups, filling each about ¾ full.
  8. Bake muffins: Bake for 10–14 minutes or until a toothpick comes out clean.
  9. Cool and serve: Cool slightly before serving or storing.
