  • 1 cup almond flour
  • ¼ cup coconut flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 3 large eggs
  • ¼ cup melted coconut oil or butter
  • ¼ cup monk fruit sweetener
  • 1 teaspoon banana extract or ⅓ ripe banana (mashed)
  • 1 teaspoon vanilla extract
  • ¼ cup unsweetened almond milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large bowl, whisk eggs, sweetener, banana extract (or banana), vanilla, and coconut oil.
  3. In another bowl, mix almond flour, coconut flour, salt, and baking soda.
  4. Combine wet and dry ingredients. Stir in almond milk until smooth.
  5. Pour batter into the pan. Bake for 45–55 minutes, or until a toothpick comes out clean.
  6. Cool before slicing.

Notes

Use room temperature ingredients and don’t overmix. Optional mix-ins include sugar-free chocolate chips or chopped walnuts for added flavor and texture.
