  • 1 ¾ cups whole wheat flour (or half whole wheat, half all-purpose)
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon (optional)
  • ¼ teaspoon salt
  • 3 overripe bananas, mashed
  • ½ cup plain Greek yogurt (or regular yogurt)
  • 2 eggs
  • ¼ cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • ⅓ cup chopped walnuts or pecans (optional)
  • ¼ cup dark chocolate chips (optional)
  • 1 tablespoon ground flax or chia seeds (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×5 inch loaf pan or line with parchment paper.
  2. Mash bananas in a large bowl until smooth.
  3. Add Greek yogurt, eggs, maple syrup, and vanilla extract. Stir until combined.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  5. Gently fold the dry ingredients into the wet ingredients until just combined — don’t overmix.
  6. Fold in optional add-ins like nuts, chocolate chips, or flaxseed.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let cool in the pan for 10–15 minutes before transferring to a wire rack to cool completely.

Notes

Use very ripe bananas for natural sweetness. Greek yogurt gives extra protein, but regular yogurt works well too. Avoid overmixing to keep the bread light and fluffy.
