A moist, protein-packed banana bread made with natural peanut butter, ripe bananas, and whole grains—perfect for a nourishing breakfast or snack.

  • 3 very ripe bananas
  • 1/2 cup natural peanut butter
  • 2 eggs or flax eggs
  • 1/4 cup maple syrup or honey
  • 1/2 cup Greek yogurt or unsweetened applesauce
  • 1 1/2 cups whole wheat or oat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • Optional: 1/2 cup dark chocolate chips or chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C) and line or grease a loaf pan.
  2. Mash bananas in a large bowl until smooth.
  3. Add peanut butter, maple syrup or honey, eggs, and yogurt/applesauce. Whisk until creamy.
  4. In another bowl, mix flour, baking soda, baking powder, cinnamon, and salt.
  5. Gently fold dry ingredients into wet mixture. Do not overmix.
  6. Stir in any optional add-ins like chocolate chips or nuts.
  7. Pour batter into prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes or until a toothpick inserted comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

Use extra ripe bananas for best sweetness and moisture. Avoid overmixing to keep the loaf tender.
