  • 1 ½ cups whole wheat flour (or oat flour for gluten-free)
  • 1 tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 3 overripe bananas, mashed
  • 2 eggs, room temperature
  • ¼ cup olive oil (or melted coconut oil)
  • ¼ cup honey or pure maple syrup
  • ⅓ cup Greek yogurt
  • 1 tsp pure vanilla extract
  • ½ cup chopped walnuts or pecans (optional)
  • ⅓ cup dark chocolate chips (optional)
  • ¼ cup unsweetened shredded coconut (optional)
  • 2 tbsp ground flaxseed or chia seeds (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, whisk together whole wheat flour, baking soda, cinnamon, and salt.
  3. In another bowl, mix mashed bananas, eggs, olive oil, honey or maple syrup, Greek yogurt, and vanilla until smooth.
  4. Fold wet mixture into dry ingredients just until combined—do not overmix.
  5. Gently stir in any optional add-ins.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes. Start checking at 45 minutes. Use a toothpick to test doneness.
  8. Cool in pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Use overripe bananas for the best sweetness and moisture. Don’t overmix the batter to keep the loaf light and tender.
