  • ¾ cup vegetable oil
  • ½ cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 tablespoon red food coloring (or to desired intensity)
  • Cream cheese frosting (for topping)
  • Optional decorations: red gel, candy eyeballs, gummy worms, Halloween sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Line muffin pan with Halloween-themed cupcake liners.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Sift for lighter texture.
  3. In another bowl, beat eggs, sugar, and oil until smooth. Add buttermilk, vanilla, vinegar, and food coloring. Mix well.
  4. Gradually mix dry ingredients into wet ingredients. Stir until just combined—do not overmix.
  5. Fill liners about ⅔ full. Bake 18–20 minutes or until a toothpick comes out clean. Cool in pan 5 minutes, then transfer to a wire rack.
  6. Once cool, frost with cream cheese frosting. Decorate with red gel for vampire bites, candy eyes, gummy worms, or Halloween sprinkles.
