Ingredients

Scale
  • 34 ripe bananas, mashed (about 1 ½ cups)
  • ¼ to cup unsweetened applesauce
  • 1 ¾ cups gluten-free 1:1 flour blend with xanthan gum
  • ⅓ cup plant-based milk
  • ½ cup chopped walnuts or pecans
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • ½ tsp cinnamon (optional)
  • ¼ cup maple syrup or coconut sugar (optional, depending on banana sweetness)

Instructions

  1. Preheat the oven: Preheat oven to 350°F (175°C) and grease or line a loaf pan.
  2. Mash the bananas: In a large bowl, mash bananas until smooth.
  3. Mix wet ingredients: Add applesauce, plant milk, vanilla extract, and sweetener if using. Stir well.
  4. Combine dry ingredients: In a separate bowl, mix gluten-free flour, baking soda, salt, and cinnamon.
  5. Combine wet and dry: Combine wet and dry ingredients until just mixed—do not overmix.
  6. Add nuts: Fold in chopped nuts.
  7. Pour into pan: Pour batter into prepared loaf pan and smooth the top.
  8. Bake: Bake for 50–60 minutes or until a toothpick comes out clean.
  9. Cool: Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Serve: Slice and enjoy!

Notes

Use very ripe bananas for the best flavor and texture. Lightly toast nuts before adding for extra depth. Store in an airtight container for 3–4 days or freeze for up to 3 months.
