A moist, naturally gluten-free banana bread made without any flour. Rich with banana flavor and simple, wholesome ingredients.

Ingredients

  • 3 large overripe bananas, mashed
  • 2 large eggs
  • ½ cup almond butter (or peanut butter)
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • 1 tsp baking soda
  • ¼ tsp salt
  • Optional: ¼ cup honey or maple syrup for extra sweetness
  • Optional: ½ cup dark chocolate chips or chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper or lightly grease it.
  2. In a large bowl, mash the bananas until smooth.
  3. Add eggs, almond butter, vanilla, and sweetener (if using). Mix well until fully combined.
  4. Stir in baking soda, salt, and cinnamon. Fold in chocolate chips or nuts if desired.
  5. Pour the batter into the loaf pan and smooth the top.
  6. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For best flavor and moisture, use very ripe bananas. Don’t overmix the batter and be sure to let it cool before slicing for clean cuts.
