Moist, nutty, and irresistibly flavorful, this one-bowl easy banana peanut butter bread is the perfect comfort bake—no mixer needed, just pure homey goodness.

Ingredients

Scale
  • 3 medium ripe bananas (mashed, about 1 ½ cups)
  • ½ cup creamy peanut butter
  • ½ cup brown sugar
  • 2 large eggs
  • ¼ cup melted butter (or coconut oil)
  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract
  • ½ cup chocolate chips or chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan with parchment paper.
  2. Mash bananas in a large mixing bowl until mostly smooth.
  3. Add peanut butter, eggs, melted butter, vanilla, and brown sugar. Whisk until well combined.
  4. Add salt and baking soda, then stir in flour. Fold until just combined.
  5. Pour batter into the prepared pan and smooth the top.
  6. Optional: Swirl extra peanut butter on top or sprinkle with chocolate chips or chopped nuts.
  7. Bake for 55–65 minutes, or until a toothpick inserted comes out clean.
  8. Cool in the pan for 10–15 minutes before slicing and serving.

Notes

Use very ripe bananas for the best flavor and moisture. Avoid overmixing to keep the texture tender.
