This cottage cheese banana bread is moist, protein-packed, and bursting with comforting banana flavor. It’s a healthy twist on a classic that’s perfect for breakfast, snacks, or dessert.

  • 3 ripe bananas, mashed
  • 1 cup cottage cheese (blend for a smoother loaf)
  • 2 large eggs
  • 1/3 cup maple syrup or honey (optional)
  • 1 tsp vanilla extract
  • 1 ½ cups oat flour or whole wheat flour
  • 1 tsp baking soda
  • ½ tsp ground cinnamon
  • Pinch of salt
  • Optional: ½ cup chopped nuts, chocolate chips, flaxseed, chia seeds, or protein powder

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
  2. Mash the ripe bananas in a large bowl until smooth.
  3. Blend cottage cheese until creamy, then add to the bananas along with eggs, maple syrup or honey, and vanilla extract. Mix well.
  4. Stir in oat or whole wheat flour, baking soda, cinnamon, and salt. Mix until just combined.
  5. Fold in any optional add-ins like nuts, chocolate chips, or seeds.
  6. Pour batter into prepared pan and spread evenly. Tap to remove air bubbles.
  7. Bake for 50–60 minutes. Check at 50 minutes with a toothpick—should come out clean or with moist crumbs.
  8. If browning too fast, tent with foil at the 40-minute mark.
  9. Let cool in pan for 10–15 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas for natural sweetness and moist texture. Blend cottage cheese for a creamy, lump-free batter. Avoid overmixing for a light, fluffy loaf.
