  • 3 overripe bananas
  • 2 large eggs (room temperature)
  • ½ cup brown sugar
  • ¼ cup white sugar (optional)
  • ½ cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • ¼ cup plain Greek yogurt or sour cream
  • ¼ cup pistachio butter (plus 12 tbsp for swirling)
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ to ¾ cup dark or semi-sweet chocolate chips (tossed in flour)
  • Optional: chopped pistachios for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Mash bananas in a large mixing bowl until smooth.
  3. Add eggs, brown sugar, white sugar (if using), oil, vanilla, Greek yogurt, and pistachio butter. Stir until combined but do not overmix.
  4. Fold in flour, baking soda, and salt just until incorporated.
  5. Gently fold in chocolate chips and optional chopped pistachios.
  6. Pour batter into the prepared loaf pan and swirl 1–2 tbsp of pistachio butter on top.
  7. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for best flavor and texture. Don’t overmix the batter to keep the bread soft and tender. Warm pistachio butter slightly before swirling on top for a smooth finish.
