Brown butter banana bread is the coziest twist on a classic favorite — rich, nutty, and incredibly moist with the deep flavor of caramelized butter and overripe bananas.

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter (for browning)
  • ½ cup brown sugar
  • ¼ cup white sugar
  • 2 eggs
  • 3 overripe bananas, mashed
  • 1 tsp vanilla extract
  • ¼ cup sour cream or Greek yogurt
  • Optional: ½ cup chocolate chips or chopped nuts
  • Optional: 1 tbsp milk powder

Instructions

  1. Préparer le four – Preheat oven to 350°F and grease a 9×5 inch loaf pan.
  2. Faire le beurre noisette – In a light-colored pan, melt butter over medium heat, stirring until it foams and turns golden brown with a nutty aroma. Cool slightly.
  3. Mélanger les ingrédients humides – In a large bowl, mix browned butter, brown sugar, white sugar, eggs, vanilla, mashed bananas, and sour cream.
  4. Combiner les ingrédients secs – In another bowl, whisk together flour, baking soda, and salt.
  5. Assembler la pâte – Gently stir dry ingredients into wet until just combined. Don’t overmix.
  6. Ajouter les extras – Fold in chocolate chips or nuts if using.
  7. Cuisson – Pour into prepared loaf pan and bake for 55–65 minutes, until a toothpick comes out mostly clean.
  8. Refroidir et servir – Cool on a wire rack before slicing and serving.

Notes

Use overripe bananas for best flavor and moisture. Browned butter adds deep, toasty notes. Optional milk powder gives an extra tender crumb.
