A moist, comforting banana bread infused with juicy blueberries—perfect for breakfast, dessert, or an anytime treat.

Ingredients

  • 3 overripe bananas, mashed
  • 2 large eggs
  • ½ cup melted butter or neutral oil
  • ¾ cup brown sugar
  • 1 tsp vanilla extract
  • 1¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon (optional)
  • 1 cup blueberries (fresh or frozen)
  • 1 tbsp flour (for coating berries)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, mash bananas until mostly smooth.
  3. Whisk in eggs, melted butter or oil, brown sugar, and vanilla extract until combined.
  4. In another bowl, mix flour, baking soda, baking powder, salt, and cinnamon.
  5. Fold dry ingredients into wet mixture just until combined—do not overmix.
  6. Toss blueberries with 1 tbsp flour, then gently fold into batter.
  7. Pour batter into loaf pan. Optionally, sprinkle extra berries on top.
  8. Bake for 55–65 minutes, or until a toothpick comes out clean.
  9. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas for best sweetness and texture. Don’t thaw frozen blueberries before baking to prevent streaking.
