A soft, rich banana bread made with black beans, ripe bananas, and oat flour—perfect for a healthy, gluten-free, and high-protein treat.

Ingredients

  • 1 cup cooked black beans (rinsed & drained)
  • 2 large ripe bananas
  • 2 eggs or 2 flax eggs (for vegan version)
  • 1/3 cup maple syrup or honey
  • 1/4 cup coconut oil or almond butter
  • 1 tsp vanilla extract
  • 1 cup oat flour (or finely ground oats)
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • Optional: 1/3 cup dark chocolate chips or chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease or line a 9×5 loaf pan with parchment.
  2. In a food processor or high-speed blender, blend black beans and bananas until smooth.
  3. Add eggs (or flax eggs), maple syrup, coconut oil, and vanilla. Blend again until combined.
  4. In a bowl, whisk together oat flour, baking soda, cinnamon, and salt.
  5. Pour the wet mixture into the dry ingredients. Stir until just combined. Fold in any add-ins like chocolate chips or nuts.
  6. Transfer batter to the loaf pan. Smooth the top.
  7. Bake for 45–55 minutes, or until a toothpick comes out mostly clean from the center.
  8. Cool in pan for 10 minutes, then move to a wire rack to cool completely.

Notes

Use overripe bananas for best sweetness and avoid overmixing to ensure the bread remains tender and moist.
