Ingredients

  • 1 box yellow cake mix

  • 1 (3.4 oz) box instant banana or vanilla pudding mix

  • 3 large eggs

  • ½ cup vegetable oil or melted butter

  • 1 cup milk or water

  • 2–3 very ripe bananas, mashed

  • 1–2 ripe bananas, sliced (for layering)

  • 1 container whipped topping (Cool Whip or homemade)

  • 1 cup crushed vanilla wafers (plus extra for garnish)

  • Optional:

    • ½ cup sour cream or Greek yogurt

    • ½ tsp cinnamon or nutmeg

    • ½ cup toasted pecans or walnuts

    • 1 tsp vanilla bean paste

    • Caramel drizzle (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or two 9-inch round pans.

  2. In a large bowl, combine cake mix, pudding mix, eggs, oil, milk, and mashed bananas. Mix on medium speed for 2–3 minutes until smooth.

  3. Pour the batter into prepared pan(s) and smooth the top.

  4. Bake for 30–35 minutes (9×13 pan) or 25–30 minutes (round pans), until a toothpick inserted comes out clean.

  5. Let cake cool completely in the pan on a wire rack.

  6. Once cooled, layer sliced bananas over the cake.

  7. Spread whipped topping evenly over the banana layer.

  8. Sprinkle crushed vanilla wafers on top.

  9. Garnish with additional banana slices, whole wafers, nuts, or a caramel drizzle if desired.

  10. Chill for at least 1 hour before serving to allow flavors to meld.
