A nostalgic twist on a Southern classic, these banana pudding cake pops combine moist banana cake with creamy pudding and a sweet candy coating—perfect for parties and dessert lovers alike.

  • 1 box yellow cake mix (or homemade vanilla cake)
  • 1 cup mashed ripe bananas (about 2 bananas)
  • 1/2 cup milk
  • 3 large eggs
  • 1/4 cup vegetable oil
  • 1 package (3.4 oz) instant banana pudding mix
  • 1 cup prepared banana pudding (store-bought or homemade)
  • Candy melts or white chocolate
  • Lollipop sticks
  • Optional: crushed Nilla wafers, banana chips, sprinkles

Instructions

  1. Prepare oven and pan: Preheat oven to 350°F (175°C) and grease a 9×13-inch pan.
  2. Mix cake ingredients: In a large bowl, combine cake mix, mashed bananas, milk, eggs, oil, and banana pudding mix. Mix until smooth.
  3. Bake and cool the cake: Pour into prepared pan and bake for 28–32 minutes, or until a toothpick comes out clean. Let cool completely.
  4. Crumble and mix with pudding: Crumble cooled cake into fine crumbs in a large bowl. Add 1 cup of banana pudding to the crumbs and mix until a dough-like texture forms.
  5. Form and chill the balls: Roll into 1 tbsp balls and place on a lined tray. Chill in freezer for 20 minutes.
  6. Melt and dip: Melt candy melts or white chocolate as per package instructions. Dip stick tips in melted coating, insert into balls, then dip entire pop to coat.
  7. Decorate and dry: Decorate with Nilla wafers, banana chips, or sprinkles. Let dry upright.

Notes

Chill pops before dipping to keep them intact. Use natural light and themed sticks for a stunning presentation.
