Soft, chewy, and packed with nostalgic banana flavor, these Banana Pudding Cake Mix Cookies come together quickly with cake mix and instant pudding for a treat that tastes like home.

  • 1 box yellow or banana cake mix (15.25 oz)
  • 1 (3.4 oz) box instant banana pudding mix
  • 2 large eggs
  • ½ cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract (optional)
  • Optional: 1 cup white chocolate chips, chopped walnuts, or crushed Nilla wafers

Instructions

  1. Preheat Oven: Set the oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. Mix Dough: In a large bowl, combine the cake mix and pudding mix. Add eggs, oil, and vanilla if using. Stir until a thick dough forms.
  3. Add Mix-ins: Fold in optional white chocolate chips, chopped nuts, or crushed Nilla wafers if desired.
  4. Shape Cookies: Use a cookie scoop or tablespoon to place dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake Cookies: Bake for 10–12 minutes until the edges are lightly golden. Centers will look soft—this is ideal.
  6. Cool and Serve: Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For extra banana flavor, add ½ tsp banana extract or ¼ cup mashed ripe banana and reduce oil slightly. Do not overmix or overbake to maintain chewy texture.
