Banana oatmeal muffins are the perfect blend of comfort, nutrition, and simplicity. These muffins are packed with ripe bananas, hearty oats, and just the right amount of natural sweetness. Perfect for breakfast or a wholesome snack.

  • 23 ripe bananas, mashed
  • 2 eggs
  • 1/3 cup oil or melted butter
  • 1/4 cup maple syrup or honey
  • 1/2 cup milk (dairy or plant-based)
  • 1 tsp vanilla extract
  • 1 1/2 cups rolled oats
  • 1 cup flour (or oat flour)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a muffin tin with liners or grease lightly.
  2. Mash bananas in a large bowl until smooth.
  3. Add eggs, oil or melted butter, maple syrup or honey, milk, and vanilla extract. Mix until combined.
  4. Stir in oats, flour, baking powder, baking soda, cinnamon, and salt.
  5. Mix until just combined—do not overmix.
  6. Divide batter evenly into muffin cups, filling each about 3/4 full.
  7. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use overripe bananas for natural sweetness. Avoid overmixing the batter to keep muffins light and fluffy. You can customize with chocolate chips, nuts, or berries—just keep add-ins to 3/4 cup total.
