Ingredients

Scale
  • 1 cup mashed ripe bananas (about 23 medium)
  • 1/2 cup unsalted butter, melted
  • 3/4 cup light or dark brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder

  • 3/4 cup semi-sweet chocolate chips (plus extra for topping)

Instructions

  1. Mash bananas in a large bowl until mostly smooth.
  2. Add melted butter, brown sugar, egg, and vanilla. Stir until well combined.
  3. Sprinkle in flour, baking powder, baking soda, and salt. Stir just until combined.
  4. Fold in chocolate chips, reserving some for topping.
  5. Pour batter into a greased or parchment-lined 8×8 or 9×9 inch baking pan and spread evenly.
  6. Top with extra chocolate chips.
  7. Bake at 350°F (175°C) for 25–30 minutes, until a toothpick inserted comes out clean.
  8. Cool for 15 minutes before cutting into squares.

Notes

Use overripe bananas with brown spots for the sweetest flavor. Store in an airtight container or freeze for later.
