Ingredients

  • 3 large ripe bananas, mashed
  • 1/2 cup unsweetened applesauce (egg substitute)
  • 1/2 cup granulated sugar or coconut sugar
  • 1/3 cup oil (canola or melted coconut oil)
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a standard 9×5 loaf pan.
  2. Mash bananas in a large bowl until smooth.
  3. Add applesauce, sugar, oil, and vanilla. Mix well.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  5. Gently fold dry ingredients into wet mixture. Do not overmix.
  6. Pour batter into loaf pan and smooth the top.
  7. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 10 minutes, then transfer to wire rack to cool completely.

Notes

Use very ripe bananas for best flavor. Optional toppings include chopped walnuts or vegan chocolate chips. Let loaf cool before slicing to retain structure.
