Wholesome, moist, and naturally sweet banana bread muffins made with real ingredients for a guilt-free treat.

Ingredients

  • 2 large ripe bananas, mashed
  • 2 eggs (or flax eggs)
  • 1/3 cup honey or maple syrup
  • 1/4 cup Greek yogurt (or plant-based alternative)
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 cup whole wheat flour
  • 1/2 cup oat flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • Optional: 1/3 cup chopped walnuts or pecans
  • Optional: 1/4 cup dark chocolate chips
  • Optional: 2 tbsp chia or flax seeds
  • Optional: 1/2 cup blueberries or grated carrot

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin.
  2. In a large bowl, whisk bananas, eggs, oil, sweetener, yogurt, and vanilla.
  3. In another bowl, combine flours, baking soda, cinnamon, and salt.
  4. Gently fold dry ingredients into wet mixture. Add optional mix-ins.
  5. Scoop batter into muffin cups, about 3/4 full.
  6. Bake for 18–22 minutes, or until a toothpick comes out clean.
  7. Cool 10 minutes, then transfer to a wire rack.

Notes

Use very ripe bananas for natural sweetness. Don’t overmix the batter for fluffy texture.
