  • 2 medium overripe bananas (mashed)
  • ½ cup brown sugar
  • ½ cup melted butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup chocolate chips or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash bananas in a large mixing bowl until smooth.
  3. Add melted butter, sugar, egg, and vanilla, and mix until fully combined.
  4. Sprinkle in the dry ingredients—flour, baking soda, and salt. Stir gently until just combined.
  5. Fold in optional add-ins like chocolate chips or chopped nuts.
  6. Scoop the dough onto the baking sheet using a spoon or cookie scoop, spacing them 2 inches apart.
  7. Bake for 10–12 minutes or until edges are lightly golden.
  8. Cool on a rack, and enjoy!

Notes

Use very ripe bananas for the best flavor. Don’t overmix the dough and avoid overbaking to keep the cookies soft.
