  • 2 large ripe bananas (mashed)
  • 1 medium apple (peeled and grated or finely chopped)
  • 1 ½ cups all-purpose flour
  • ½ cup brown sugar (packed)
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg (optional)
  • 2 large eggs
  • ¼ cup apple cider vinegar
  • ⅓ cup oil (vegetable or melted coconut oil)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line with parchment paper.
  2. Mash bananas in a large mixing bowl until smooth. Stir in grated apple, brown sugar, eggs, vanilla extract, and oil.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Slowly mix dry ingredients into the wet mixture. Don’t overmix—just stir until everything is combined.
  5. Add the apple cider vinegar last and stir briefly.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Tap the pan gently on the counter to remove air bubbles.
  8. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra flavor and texture, fold in nuts, chocolate chips, or dried fruits. Grated apples keep the bread moist and evenly textured. Avoid overmixing to ensure a tender crumb.
