Banana and Peanut Butter Bread is a cozy, nutty, and naturally sweet loaf that’s perfect for breakfast or snacking. Easy to bake and even easier to love!

  • 3 ripe to overripe bananas, mashed
  • 1/2 cup creamy or chunky peanut butter
  • 1/3 cup melted butter or coconut oil
  • 2 large eggs
  • 1/2 cup brown sugar or maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose or gluten-free flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Optional: 1 tsp cinnamon, 1/2 cup chocolate chips or chopped nuts

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Mash Bananas: In a large bowl, mash the ripe bananas until smooth.
  3. Mix Wet Ingredients: Stir in peanut butter, melted butter, eggs, brown sugar, and vanilla extract until combined.
  4. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, salt, and cinnamon if using.
  5. Make the Batter: Gradually add the dry mixture to the wet ingredients, stirring just until combined.
  6. Add Extras: Fold in chocolate chips or nuts if desired.
  7. Transfer to Pan: Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake: Bake for 50–60 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  9. Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use overripe bananas for best flavor and natural sweetness. Don’t overmix the batter. Store the bread at room temperature for up to 4 days or freeze for longer shelf life.
