A cozy, moist, and nutty banana and peanut butter bread perfect for breakfast or snacking. This easy recipe brings together ripe bananas and creamy peanut butter in a soft, satisfying loaf.

  • 3 ripe to overripe bananas, mashed
  • 1/2 cup creamy or chunky peanut butter
  • 1/3 cup melted butter or coconut oil
  • 2 large eggs (or flax eggs for a vegan loaf)
  • 1/2 cup brown sugar or maple syrup
  • 1 tsp pure vanilla extract
  • 1 1/2 cups all-purpose or gluten-free flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Optional: cinnamon, chocolate chips, chopped nuts

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mash the bananas in a large mixing bowl until smooth.
  3. Stir in the peanut butter, melted butter, eggs, brown sugar or maple syrup, and vanilla extract.
  4. In a separate bowl, combine the flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients, stirring just until combined.
  6. Fold in any optional add-ins such as chocolate chips, nuts, or cinnamon.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For best results, use overripe bananas that are deeply spotted or fully brown. Avoid using bananas that are moldy or leaking. Use natural peanut butter and avoid overmixing the batter to keep the loaf moist.
