  • 2 large eggs
  • ½ cup creamy peanut butter (or almond butter)
  • ¾ cup all-purpose, oat, or almond flour

Instructions

  1. Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin.
  2. Mash bananas in a large mixing bowl until mostly smooth.
  3. Add eggs and mix until fully combined.
  4. Stir in peanut butter until smooth.
  5. Gently fold in flour until just combined—do not overmix.
  6. Spoon batter into muffin tin, filling each cup ¾ full.
